Taramosalata
150 grams taramas (cod roe)
300 grams stale white bread
2 medium peeled boiled potatoes (optional)
1 small grated onion (optional)
4 tabsps lemon juice
¾ cup Neolio single estate organic olive oil
In a bowl crumble the bread, add the taramas, potatoes and onion and mix well.
Begin to slowly add alternatively small amounts of olive oil and lemon juice. Continue beating until the mixture is creamy and smooth. Garnish with black olives and chopped flat leaf parsley.
